Holy Cow—Bill the Butcher Is Finally Opening This Sunday

After two years of waiting, Bill the Butcher will finally open the doors to its downtown Edmonds shop at noon on Sunday.

No, really.

Crews put the final touches on the shop's overhead lighting Thursday afternoon, as CEO J'Amy Owens greeted passersby who stopped in to ask that all-too-familiar question: "Are you open yet?"

Her unequivocal response: "Sunday."

Owens first announced plans to open at 323 Main Street in 2010. But over the next two years, legal and financial troubles delayed the opening time and time again. (Click here to see previous stories in Edmonds Patch about Bill the Butcher.)

With all that apparently behind her, Owens is back to talking about the benefits of eating grass-fed beef and how excited she and her team are to be part of the Edmonds community.

"We are out to save the world one steak at a time," she said. 

Like Bill the Butcher's other four stores, the 2,300-square-foot shop at Fourth and Main will focus on selling antibiotic- and hormone-free beef, pork and poultry from Northwest ranchers and farmers. The Edmonds decor, described by Owens as "ranch 'n' roll," includes a ceiling covering of metal found on the side of a local highway and a wall of wooden blocks from an old barn.

"It's stuff we scrounge around and find," Owens said. "We try to be as green as possible."

Not everything at the Edmonds Bill the Butcher will mirror the company's other locations, however. The new shop will be the first to offer sliced-to-order sandwiches for carry-out—something that might expand to other Bill the Butcher stores in the future, Owens said.

The Edmonds Bill the Butcher also plans to fully participate in local events like the monthly Edmonds Art Walk and offer demos and classes to community members.

"We're here to be a part of the community," Owens said.

And she knows the community has waited quite awhile for Bill the Butcher to arrive. In addition to the standard Bill the Butcher signage, Owens said a board announcing "Holy cow—we're really open" will hang outside the new store.
